Fes is often called the culinary capital of Morocco, and the best way to understand it is to taste it. On this half-day walking tour, a local guide leads you into the lanes of Fes el-Bali, the largest car-free medieval city in the world, to the small stalls and family shops where people from the medina buy their food every day. You taste bissara, the warm fava bean soup with olive oil and cumin eaten for breakfast; khlii, the spiced preserved meat of Fes cooked with eggs; and freshly baked bread from a communal oven. In the souks you sample olives and preserved lemons, dates and dried fruit, and at a pastry shop the honey and sesame cakes famous across the country. Along the way your guide explains the spices, the bread ovens and the traditions of Fassi cooking, and you finish with mint tea on a rooftop overlooking the medina. A delicious and very human way to discover Fes. All tastings are included.
